It’s been a while since the last time I posted an entry here. This time, I made a dessert and called it Pudding Ala Leche, LOL! I made that up haha! Anyway, before I go on let me show you the finished product.

You would need the following:
12-15 pcs Pan de Sal or 8-10 pcs of sliced white bread (left overs are best recommended)
1 can of Condensed milk
Sugar (up to you how sweet you wanted it)
1 tbsp Sugar for the Caramel
1/2 liter of Fresh boiled milk
2 whole eggs

Ingredients:
500 gms. Chicken
6 cloves Garlic
2 small Onions
2 medium Tomatoes
1 small can Green Peas
1 small can Pineapple chunks
1 medium Carrot
2 medium Potatoes (cut into 4 pieces)
2 pcs. Maggi Cubes
3 tbsp Tomato Paste
1 pouch Mama Sita’s Afritada Mix
1 cup of Water
Directions:
1. Marinate the chicken in pineapple syrup for 30 minutes and sprinkle small amount of salt.
2. Saute onions, garlic, tomatoes. Wait till the tomatoes are slightly melted.
3. Then add the chicken including the syrup. Stir for 5 minutes till the chicken juice comes out. Let it simmer for like 5 minutes.
4. Add water. Pour half pouch of the Afritada mix.
5. Put the maggi cubes and tomato paste. Add the potatoes. Then the carrots.
6. Add the remaining Afritada mix.
7. If the potatoes are almost cooked, add the pineapple chunks and green peas.
8. Simmer for 5 minutes.

Note : This is an experiment using left over sliced bread.
Ingredients :
2 pcs. Sliced Bread (leftover/made into crumbs)
1 pc. Small Egg (beaten)
160 ml. Evaporated Milk
2 tbsp. White Sugar
Butter for pan frying
Directions:
1. Grind the sliced bread till made into crumbs.
2. Put in a mixing bowl.
3. Add sugar, milk and egg.
4. Mix them well till it becomes smooth.
5. In a pan, spread a small amount of butter (slow fire).
6. Pan fry the mixture.
You can actually make 5 pcs. out of the above ingredients. But I broke the other two hehehe! I’m not so good in frying hahaha!
Note : This is an experiment. Couldn’t think of anything last night, there’s no other fish in the fridge but salmon.
Ingredients:
250 gms. Salmon fillet (cut into squares)
2 pcs. Eggs (beaten)
1 pc. Small Onion
1 pc. Small Tomato
2 cloves Garlic (peeled)
Salt and pepper to taste
Directions:
1. Fry the salmon fillet (medium). Set aside.
2. Saute onion and garlic till slightly brown.
3. Then add the tomatoes till it’s melted.
4. Pour on the fried salmon fillet. Stir.
5. Add little water and salt/pepper to taste.
6. Pour on the beaten egg and slightly scramble.
7. Simmer for 3 minutes in a slow fire.

Ingredients:
1 tsp garam masala powder
1 inch cinnamon
4 red chillies whole
3/4 cup vinegar
1 tbsp sugar
salt to taste
2 onions
1 inch ginger
10 cloves garlic
2 1/2 tbsp ghee (you can use butter as an option)
4 - 5 eggs
1/2 tsp cumin seeds
Directions:
1. Take off and cut the onions, ginger and garlic.
2. Hard boil the eggs, shell and halve lengthwise.
3. Grind the red chillies, garlic, ginger and cumin seeds with a little vinegar and salt to taste. Keep aside.
4. Heat up ghee, mix in the cut onion and fry till brown.
5. Mix in the ground paste and cinnamon.
6. Then mix in sugar, remaining vinegar and garam masala.
7. Mix in the egg halves.
8. Stir fry till the gravy thickens.
9. Serve with rice or roti.

Description:I learned this from my mother-in-law. Okay na daw ang lasa sabi ng husband ko. Tuwa ko lang!
Ingredients:
1/2 kg. Meat (your choice : lamb or pork)
3 tbsp. Cooking Oil
1/4 cup of Grated Coconut
2 tsp. Masala Powder
2 big pcs. of Red Dried Chilis
1 tsp. Ginger-Garlic-Chili Paste (pwede ding fresh pero dapat chopped: 4 cloves of garlic, 4 strips of gingers, 2 pcs. green chilis)
1 pc. Red Onion (katamtamang laki lang)
1 pc. Tomato (katamtamang laki din)
4 pcs. Cloves
1/2″ Cinnamon Bark / Stick
A Pinch of Cumin Seeds
5 pcs. Pepper Corn
A pinch of Fresh Coriander Leaves
1 cube Maggi or Knorr Beef
2 pcs. Sliced Potatoes (optional)
1/2 cup of Water
Directions:
1. Slightly burn mo sa apoy yung 2 pcs. Red Dried Chilis para lumutong, wag mo susunugin ha? Basta masayaran ng apoy.
2. In a small pan, ilagay mo yung grated coconut, tapos pag medyo nainitan na, ilagay mo yung Masala Powder. Lutuin mo hanggang maghalo na sila.
3. Tapos i-blend mo yung 1 & 2 kasama ng Cloves, Cumin Seeds, Cinnamon Bark and Pepper Corn.
4. Kung meron kang pressure cooker yun ang gamitin mo para mas madali lumambot esp. pag lamb ang lulutuin mo. Sa cooker, ilagay mo na yung Oil. Then Onions, pag brown na, lagay mo na yung na-blend mo kanina. Saute mo lang for like 3 minutes.
5. Then Ginger-Garlic-Chili Paste. Gisahin mong maigi para malasa.
6. Lagay mo na yung tomato, dapat matunaw yung tomatoes para maging sauce. Slow fire lang.
7. Lagay mo na yung meat. Isunod mo yung potatoes kung gusto mong lagyan.
8. Ilagay mo na yung Maggi Cube.
9. Then add water.
10. Let it boil for a while. Lagay mo na din yung fresh coriander leaves. Pag pressure cooker gamit mo, takpan mo na then mga 4-5 whistles lang, luto na yun. But if not, wait till the meat is tender. Pag ganito you might need more water.

1 tsp. Ginger-Garlic-Green Chili Paste
1 pc. Vegetable Maggi Cube
Salt & Pepper to taste
Directions:
1. Marinate the meat with ginger-garlic-green chili paste and red chili powder for at least 30 minutes.
2. Heat oil. Saute the onion until slightly brown.
3. Then add the tomato. Keep on stirring until it’s melted.
4. Add the meat. Let it cook until it’s tender. Stir it once in a while to avoid sticking on the pan.
Description:
A well-known Filipino appetizer.
Ingredients:
4-5 cups grated and drained Squash
300 grams peeled and cleaned Shrimps
4-5 cloves chopped Garlic
1 pc. beaten Egg
6 tbsp. Flour or Corn Starch
Salt & Pepper to taste
Water depending on the amount of the above ingredients
Directions:
1. Mix all the above ingredients together.
2. Heat the pan with cooking oil.
3. Fry until golden brown.
4. Serve with vinegar-chopped garlic dip.

Description:A Filipino dish mostly served with fried fish.
I don’t normally eat ampalaya but wanted to give it a try!
Ingredients:
2 pcs. Ampalaya (5″ long ea.)
250 gms. Shrimps (peeled and beheaded)
1 pc. Tomato (sliced)
4 cloves Garlic (chopped)
1/2 pc. Onion (sliced)
1 cube Maggi Vegetable Stock
1 pc. Egg (beaten)
Pepper and Fish Sauce to taste
Directions:
1. Saute the garlic until slightly brown. Put the onion.
2. Add the shrimps and stir for like 5 minutes. Add the tomato.
3. Put the maggi cube. Keep on stirring.
4. Now add the ampalaya till it’s half-cooked.
5. Add pepper and fish sauce to taste.
6. Pour the beaten egg and scramble it slowly.
7. Cover for 5 minutes. Then serve.
Description:Easy to make. Goes well with Shrimp Pulao.
Ingredients:
Put the amount that you think you would need depending on the no. of fishes to be cooked.
Onion
Garlic
Ginger
Cinnamon Stick (an inch)
Pepper Corn
Cloves
Cumin Seeds
Turmeric Powder
Salt & Sugar (to taste)
Dried Red Chillies (soak it in water)
Tamarind Paste
Vinegar (to taste)
Directions:
1. Roast the first three ingredients : onion, garlic and ginger.
2. Grind all the above ingredients (except the vinegar) to make a thick paste, then add the vinegar to taste. Grind till it becomes thicker like paste.
3. Cut the sides of the fish and stuff it with the paste. Spread the paste all over the fish and marinate for at least 30 minutes.
4. You can either fry or grill (wrap it in aluminum foil) it.
